The treasured White Truffle – scientific name TUBER MAGNATUM PICO – is considered the truffle par excellence because of its great market role. Known as Tartufo Bianco d'Alba originates in the hills of Langhe, Monferrato and Roero. The external surface is smooth, slightly velvety. Its colour varies from pale ochre to dark cream up to greenish. Its flesh (gleba) is unmistakable : pale cream or greyish yellow with white marbling. Its aroma - pleasantly flavoursome and different from the garlicky aroma of the other varieties – makes it unique in its own kind. It lives in symbiosis with oak, lime poplar and willow trees and it is hardly found in conjunction with other truffles. White truffles grow in particular soils and climatic conditions : soil must be soft and damp almost all year round , it must be rich in calcium and with good air circulation. These are really the features of the Langhe, Monferrato and Roero areas that make the white truffle a rare and desired fruit.
