The Summer Black Truffle or SCORZONE whose scientific name is TUBER AESTIVUM VITT, may be rather big in size and is very similar to the Black Truffle.
The external surface has brown, pyramidal warts. Its aroma is intensely flavoursome but when cut, the flesh (gleba) is dark yellow therefore different from that of Treasured Black Truffle which tends to become dark. It grows both in sandy and in clayey soils, in broadleaved woods as well as in pinewoods. Highly appreciated, it is employed for sausages and sauces.
