Description
The carpaccio is prepared with 100% Summer Black Truffle (Tuber EAestivum Vitt.) known as ‘Scorzone’ because it has a rough rind and is preserved in extra virgin olive oil. The summer truffle lends itself to this type of processing as it retains its organoleptic characteristics well; the process ensures maximum yield. It can be used as fresh, for garnishing pizzas, bruschetta, pasta dishes, meat or eggs.
