Description

Scientific name: TUBER AESTIVUM VITT.
The Black Summer Truffle is commonly called "scorzone" precisely because of its external part (the peridium) which is black in color with large pyramidal warts, the internal part (the gleba) has a color ranging from whitish to hazelnut based on its maturation.
It is the only type of truffle that is born in the summer.

Cleaning and Conservation

Once we have purchased the truffles, the problem of their conservation arises. Someone wants to say that the best place to keep them is the belly ... but it often happens that the purchase is made in anticipation of a particular dinner, with friends or family, and that a few days must pass from the moment of purchase to that of consumption.

The truffle is a hypogean mushroom (born and lives underground) and is easily perishable. The Black Truffle is less delicate than the Precious White Truffle, however it has a short duration which can vary from about 5 to 7 days. To better enjoy the aroma, the truffle should be consumed as soon as possible; when the truffle begins to become rubbery to the touch it must be consumed immediately as it has reached the maximum degree of ripeness.

The Black Truffle remaining in the closed package sometimes releases molds which manifest themselves with a white veil on the peridium (external part) but it is a natural process therefore it does not mean that the truffle has deteriorated, but it will be sufficient to brush or re-wash it to consume it.

There are some tricks that allow you to maintain the consistency and its scent even after days: upon receipt of the package it is advisable to remove the truffles from their box previously wrapped by us (as the paper will have become damp) and rewind them one by one in a new absorbent paper (the one used in rolls in the kitchen), close them in a glass jar or plastic container, change the paper again as soon as the retained humidity proves to be excessive and keep them in the refrigerator (from 2° to 4° about).

The Black Truffle is delivered by us after being "coarsely" washed as its rough rind retains a lot of earth; it will still have to be washed again but only at the time of consumption under cold running water using a toothbrush in order to clean even the most difficult parts. After washing, dry the truffles well one by one with absorbent kitchen paper and leave them to rest for at least half an hour before slicing them so that they can regain their full aroma.

Recommendations for use

It is one of the most used truffles for the preparation of sauces or for stuffed pasta. It can be sliced ​​on any meat dish such as a carpaccio, a fillet, on a pizza to make it special or used as a filling for fresh pasta.

The Black Summer Truffle does not have a strong and intense aroma like the White Truffle ( Tuber Magnatum Pico ) therefore it is advisable to use a larger quantity and not less than about 15 gr. per person.

The Black Truffle, unlike the White Truffle which must absolutely be eaten raw, it is advisable to slice it and heat it as the heat helps it to best release its aromatic properties

An excellent first course is the classic and famous '' Tajarin '' pasta (similar to a tagliatelle but cut by hand and very thin) which represent one of the most traditional dishes of the Langhe cuisine: in a pan, melt simple butter or truffle butter, slice the fresh truffle so that it feels a a little heat and after boiling, sauté the pasta in the sauce. If you are cooking a risotto, you can slice it in the last minutes of cooking while creaming. A simple dish, which goes very well with truffles, is fried eggs or cocotte.

Shipments

The Fresh Truffle is shipped with "express" service in suitable polystyrene containers and with the addition of synthetic ice.
Transit times are always estimated and never guaranteed . They vary from 24h/48h working hours , based on how the destination location is served, except for any delays by the couriers, for which we cannot assume responsibility.

Shipments are made on Mondays, Tuesdays and Wednesdays. Orders and payments by bank transfer received after 2pm on Wednesday will be shipped the following Monday as we want to guarantee and preserve the quality of the product and the Fresh Truffle is a very delicate and perishable product.

In this way, the truffle will arrive comfortably at your home without deteriorating and without losing its properties and the scent that make it unique and unmistakable.
