Description

Scientific name: TUBER AESTIVUM VITT. The Black Summer Truffle is commonly called “Scorzone” precisely because of its dark black outer layer (the peridium), which has a very rough surface and large, pyramid-shaped warts; the inner part (the gleba) ranges in color from whitish to hazelnut brown depending on its ripeness. It is the only type of truffle that grows during the summer. Please note: This product is subject to weight loss.

Cleaning and Storage:

Once we’ve bought the truffles, the question of how to store them arises. Some might say that the best place to store them is in your stomach… but often, truffles are purchased in anticipation of a special dinner with friends or family, and several days may pass between the time of purchase and consumption. The truffle is a subterranean fungus (it grows and lives underground) and is highly perishable. The black truffle is less delicate than the prized white truffle, but it still has a short shelf life that can range from about 5 to 7 days. To best enjoy its aroma, the truffle should be eaten as soon as possible; when the truffle begins to feel rubbery to the touch, it must be eaten immediately, as it has reached its peak of ripeness. When left in the sealed package, the black truffle sometimes develops mold, which appears as a white film on the peridium (outer layer); however, this is a natural process and does not mean the truffle has spoiled—simply brushing or rinsing it will make it ready to eat. There are a few tips to help preserve the truffle’s texture and aroma even after several days: upon receiving the package, we recommend removing the truffles from the polystyrene box.

Since the paper they were wrapped in will have become damp, we recommend rewrapping them one by one in new paper towels (the kind used in rolls in the kitchen), placing them in a glass jar or plastic container, and replacing the paper as needed if there is excessive moisture. Store them in the refrigerator (at approximately 2° to 4°). . We deliver the black truffle after it has been “roughly” washed, as its rough skin retains a lot of dirt; it will need to be washed again, but only just before consumption, under cold running water using a small brush to clean even the most difficult-to-reach areas.



Tips for Use

The black truffle is one of the most commonly used truffles in the preparation of sauces or stuffed pasta. It can be sliced over any meat dish, such as carpaccio or a filet, or added to a pizza to make it special. It can also be used to enhance a simple, traditional fried egg. Unlike the white truffle, which must be eaten raw, it is recommended to slice it and heat it, as the heat brings out its aromatic qualities best. An excellent first course is the classic “Tajarin” from the Langhe: melt some butter in a pan, slice the fresh truffle, and after boiling the pasta, toss it in the sauce. If you’re making risotto, however, you can slice the truffle in the final minutes, while stirring in the cream.

Shipping

Fresh truffles are shipped via “express” service in suitable polystyrene containers with synthetic ice; this ensures that the truffles arrive safely at your home without spoiling and without losing the qualities and aroma that make them unique and unmistakable. Shipments are made on Monday, Tuesday, and Wednesday. Orders received after 2:00 PM on Wednesday will be shipped within the following week, subject to availability. Fresh truffles are very delicate and perishable; therefore, we aim to guarantee and preserve the product’s quality by purchasing daily from our “Trifulau” and shipping based on the availability of our harvest. If truffles are not available on the day the order is received, it will be prioritized for shipment in the following days. Delivery times are always estimates and never guaranteed. They range from 24 to 48 business hours, depending on how well the destination is served, excluding any delays on the part of the couriers, for which we cannot be held responsible. Couriers do not provide advance notice of delivery even if we have provided a phone number; therefore, someone must be present at the delivery address on the scheduled delivery day.

Sizes and Prices

The available size options are as follows: FROM 15 GR. AND UP: this means that each individual truffle weighs at least 15 gr.; UNDER 15 GR.: this means that each individual truffle weighs no more than 14 gr. Truffles are a seasonal product whose growth is determined by environmental and weather conditions; these factors may cause price fluctuations.
